Résumé

Fish waste was mixed with molasses and fermented with a Lactobacillus plantarum starter culture. The chemical and microbiological characteristics of the final product were determined, including pH, total nitrogen, total volatile nitrogen, nonprotein nitrogen, fat carbohydrates, dry matter, plate counts, coliforms, Salmonella, Clostridium, yeasts and lactics. The product was used as a protein substitute, at 0, 5, 15 and 25% concentrations respectively, in a conventional broiler poultry feed formula, and tested with 4 lots of 10 broilers each. Weight gain and mortality were followed up for 25 days. The results indicated a net weight gain and feed intake increase with the fermented fish waste formula, i.e. similar to or better than the control.
